This heirloom variety can be eaten at every stage of it's development. The sprouts can be eaten similar to alfalfa sprouts, the greens can be harvested at baby-leaf stage to be used in fresh raw salads, the mature greens can be used like kale, and the seeds can even be harvested and cooked as a grain! No matter when you harvest your amaranth, it will be packed full of nutrients, vitamins, and even a hefty helping of protein! A must add vegetable for your summer garden. 

Plant Preferences:

Amaranth is an easy to grow vegetable that will tolerate many soil conditions as long as the weather is warm and suffecient irrigation is provided. 

When to Sow:

Amaranth is very much a summer crop and prefers long hot and humid summers, especially when growing for full size leaves or flowers and grain. Begin growing in the spring when soil temperatures have risen to at least 65-70 degrees. 

Days to Maturity: 

Baby Leaf: 20-30 days

Full Size: 50-55 days

Sowing Depth:

1/8"-1/4"

Plant Spacing:

Baby Leaf: Sow seeds in 2" wide bands, seeds approximately 3/4" apart, and bands about 6"-10" apart. 

Full Size: Sow seeds as described above, but thin seedlings out to 6" spacing.
