Cilantro brings a strong and fresh flavor to any recipe, and is perfect for complementing spicy dishes. It is a highly versatile crop, as its seeds can be ground into fresh coriander, the stems and leaves enjoyed as cilantro, and if left to flower, it will produce delicate white flowers that are wonderful pollinators for small, native bees.

Plant Preferences:

Cilantro does best in the cool weather, but will give continual harvests in the summer months if provided with shade. If you plan to grow cilantro for fresh coriander, expect three months for the plant to go to seed.

When to Sow:

Start seeds inside at any time or sow outdoors when warm spring months arrive. If starting cilantro seedlings inside to transplant, sow seeds 6 weeks before transplanting outside.

Harvest:

Harvest by cutting near the base of the plant and allow 2 weeks for the herb to regrow for additional harvest. Seeds can be collected and dried as coriander.
